About this Recipe
These hearty, delicious muffins go great with your morning (or afternoon) cup of Joe! You can switch up the nuts on top to suit your tastes…. pecans, walnuts, almonds, pistachios, etc.
- 1/4 cup butter, softened
- 1 cup brown sugar, packed
- 2 lrg eggs, room temperature
- 1/4 cup unsweetened applesauce
- 1/2 cup buttermilk
- 1/2 cup brewed coffee (don’t cool)
- 1 Tbsp instant coffeeÂ
- 1/2 tsp vanilla extract
- 1 cup all-purpose flour
- 3/4 cup whole wheat flour
- 1-1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
- 1/2 cup finely chopped pecans or walnuts, divided
Step by Step Instructions
Step 1
Preheat oven to 375. In a large bowl, beat butter and brown sugar until crumbly, about 2 minutes. Add eggs; mix well. Beat in applesauce.
Step 2
In a small bowl, whisk buttermilk, brewed coffee, instant coffee and vanilla extract until granules are dissolved; gradually add to butter mixture.
Step 3
In another bowl, whisk flours, baking powder, baking soda, cinnamon and salt. Add to butter mixture; stir just until moistened. Fold in 1/4 cup pecans (or any other nut you prefer).
Step 4
Spray 12 muffin cups with cooking spray or use paper liners; fill 3/4 full. Sprinkle with remaining pecans (or other nut). Bake 15-20 minutes or until a toothpick inserted in center comes out clean. Cool 5 minutes before removing from pan to a wire rack. Serve warm.
